Rebecca Winters shared this authentic Lebanese recipe with us (along with one for Hummus), courtesy of her great-grandmother, Afifi Stanbuli.

Ingredients
- 1/2 cup fine cracked bulgur wheat
- 2 ripped tomatoes
- 1 large cucumber
- 1 bunch green onions
- 1 bunch parsley
- Juice of 2 large lemons, about 6-8 TBS
- 1/2 cup olive oil
- Salt and pepper, to taste
Steps
- Pour the cracked bulgur wheat into a small bowl and cover with water. Soak for 15 minutes while you chop the vegetables.
- Chop all vegetables finely in a blender or a food processor.
- Drain the bulgur wheat and squeeze out excess water by hand.
- Combine all ingredients in a bowl, toss, chill and serve.
