Tabouli

Rebecca Winters shared this authentic Lebanese recipe with us (along with one for Hummus), courtesy of her great-grandmother, Afifi Stanbuli.

 

Ingredients

  • 1/2 cup fine cracked bulgur wheat
  • 2 ripped tomatoes
  • 1 large cucumber
  • 1 bunch green onions
  • 1 bunch parsley
  • Juice of 2 large lemons, about 6-8 TBS
  • 1/2 cup olive oil
  • Salt and pepper, to taste

 

Steps

  1. Pour the cracked bulgur wheat into a small bowl and cover with water. Soak for 15 minutes while you chop the vegetables.
  2. Chop all vegetables finely in a blender or a food processor.
  3. Drain the bulgur wheat and squeeze out excess water by hand.
  4. Combine all ingredients in a bowl, toss, chill and serve.

 

Ingredients can be found in any local or chain grocery store.
