Palestinian breakfast is often small plates of whatever is around. One item that is common is bread with a zaatar mix. Zaatar is a blend of spices and dried wild thyme (hyssop) and the ratios are to taste. The best way to approach this is to try it again and again until it’s how you like it!
Black tea is often served as well and just like the zaatar mix, the flavor can be adjusted to your tastes, utilizing dried marjoram or fresh mint.

Zaatar Mix Ingredients
Ratios to taste
- Ground dried zaatar
- Sesame seeds
- Sumac
- Salt
- Olive Oil
Steps
- Ground zaatar (wild thyme) is the main element of the dish. Add all of the dry ingredients to the zaatar and mix.
- Add some olive oil melt the salt and allow the flavors to blend.
- Enjoy by dipping some warm bread into the olive oil and the mixture.
