Garam Masala (from “Bengal Lancers”)

This is a spice blend – if you do not want to make your own, we recommend buying a pre-made jar from Patel Brothers, locations in Niles (Golf/Milwaukee) and Chicago (on Devon Avenue in Little India).

Ingredients

Yields approximately 20 tablespoons

  • 3 ounces coriander seeds
  • 1 ounce cumin seeds
  • ¼ ounce fenugreek seeds
  • 1 ounce cloves
  • 2 ounces cardamom seeds
  • ¼ teaspoon mace
  • ¼ teaspoon nutmeg
  • 1 ounce cinnamon
  • 1 ounce black pepper

Steps

Please note – roasting the ingredients separately is important as each gives off its characteristic aroma at different times.

  1. Roast coriander seeds, cumin, and fenugreek seeds separately for a few minutes until their rich aroma is given off. Combine with all other ingredients and grind.
  2. Pass the mixture through a sieve and store in an airtight jar.
  3. Use in any recipe that calls for Garam Masala (such as Sukha Gobhi!)
